The name was inspired by a tour we did in New Zealand. "DAZUMA" (Mrs. Dazu) was the owner of the homestay where I rested. She also was my guide during the stay, and since she was so considerate, she would always treat me to her favorite local delicacy- smoked lamb shoulder! Despite its intensely spicy flavor, I loved the taste so much that it stayed with me even after my return to France! Thanks to her kind advice and wise guidance I finally opened my own restaurant named after DAZUMA, the one to give me that first taste of a smoked lamb shoulder that changed my life!
